Butter Beans
  • 2 cans butter beans drained and rinsed
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Creamy Sauce
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 1/4 cup parmesan cheese grated
  • 2 tablespoons fresh basil chopped

Method
 

Prepare the Sauce
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Pour in the vegetable broth and heavy cream, stirring to combine. Add Italian seasoning, salt, and pepper.
Cook the Vegetables
  1. Add the cherry tomatoes to the skillet and cook for 5 minutes until they start to soften.
  2. Stir in the spinach and cook until wilted, about 2-3 minutes.
Combine with Butter Beans
  1. Gently fold in the butter beans and cook for an additional 5-7 minutes until heated through.
Serve
  1. Serve hot, garnished with grated parmesan cheese and fresh basil.
