  • 2 cans butter beans drained and rinsed
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup spinach fresh
Dairy
  • 1 cup heavy cream or coconut cream for dairy-free
  • 1/2 cup parmesan cheese grated
Herbs and Spices
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes optional for heat
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Oil
  • 2 tablespoons olive oil for sautéing

Method
 

Prepare the Ingredients
  1. Drain and rinse the butter beans. Halve the cherry tomatoes and mince the garlic.
Sauté Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add Tomatoes and Spinach
  1. Add the cherry tomatoes and spinach to the skillet. Cook for about 5 minutes until the spinach wilts.
Combine with Beans
  1. Stir in the butter beans, heavy cream, oregano, red pepper flakes, salt, and black pepper. Cook for another 10 minutes, stirring occasionally.
Finish the Dish
  1. Add the grated parmesan cheese and stir until melted and creamy. Adjust seasoning if necessary.
Serve
  1. Serve warm, garnished with additional parmesan and fresh herbs if desired.
