  • 2 cups fresh mixed mushrooms e.g., cremini and shiitake, sliced
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • Salt to taste
  • Pepper to taste

  3. Pour in the vegetable broth and add the pasta. Bring to a boil, then reduce heat and simmer for about 10 minutes or until pasta is al dente.
  4. Stir in heavy cream and Parmesan cheese, cooking for an additional 2 minutes until combined.
  5. Season with salt and pepper.
  6. Serve hot with extra Parmesan on top.
