Method
- Preheat the oven to 375°F (190°C) and grease a large baking dish.
- Thinly slice the potatoes into quarter-inch rounds.
- In a medium saucepan, melt the butter over low heat. Whisk in the heavy cream until smooth, then gradually add the cheddar cheese, stirring until melted.
- Layer half of the sliced potatoes in the baking dish, pour half of the cheese sauce over them, and season with salt and pepper. Repeat with the remaining potatoes and sauce.
- Top with breadcrumbs and cover with aluminum foil. Bake for 45 minutes; remove foil during the last 10 minutes for browning.
- Let cool slightly before serving.
