Ingredients
  

  • 4 cups beef broth
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 4 oz cream cheese
  • 2 medium carrots diced
  • 2 stalks celery chopped
  • to taste salt
  • to taste pepper
  • 1 tsp dried thyme

Method
 

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot and sauté until softened.
  3. Stir in the diced carrots and chopped celery, cooking for a few more minutes until they begin to soften.
  4. Pour in the beef broth and bring the mixture to a simmer.
  5. Stir in the heavy cream and cream cheese until fully combined and creamy.
  6. Add salt, pepper, and dried thyme to taste. Simmer for an additional 5-10 minutes.
  7. Serve hot.
