Prepare the Filling
- In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, cumin, salt, and black pepper. Mix until well combined.
- Preheat the oven to 400°F (200°C).
Assemble the Taquitos
- Warm the corn tortillas in a skillet over medium heat until pliable.
- Place about 2 tablespoons of the filling on one end of each tortilla and roll tightly. Place seam side down on a baking sheet.
Bake the Taquitos
- Spray the taquitos lightly with cooking spray and bake in the preheated oven for 15-20 minutes or until golden and crispy.
Serve
- Serve hot with sour cream, salsa, shredded lettuce, and diced tomatoes on the side.
