Ingredients
  

Filling
  • 2 cups cooked chicken shredded
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 small corn tortillas
Toppings
  • 1 cup sour cream
  • 1 cup salsa
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, cumin, salt, and black pepper. Mix until well combined.
  2. Preheat the oven to 400°F (200°C).
Assemble the Taquitos
  1. Warm the corn tortillas in a skillet over medium heat until pliable.
  2. Place about 2 tablespoons of the filling on one end of each tortilla and roll tightly. Place seam side down on a baking sheet.
Bake the Taquitos
  1. Spray the taquitos lightly with cooking spray and bake in the preheated oven for 15-20 minutes or until golden and crispy.
Serve
  1. Serve hot with sour cream, salsa, shredded lettuce, and diced tomatoes on the side.

Notes
