Prepare the Cranberry Sauce
- In a saucepan, combine cranberries, sugar, and water. Bring to a boil over medium heat.
- Reduce heat and simmer for about 10 minutes, until cranberries burst and sauce thickens.
- Remove from heat and let cool.
Make the Oat Bars
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- In a mixing bowl, combine rolled oats, flour, brown sugar, melted butter, salt, baking powder, and vanilla extract. Mix until crumbly.
- Press half of the oat mixture into the bottom of the prepared baking dish.
- Spread the cooled cranberry sauce over the oat layer.
- Top with the remaining oat mixture and press down gently.
- Bake for 25 minutes or until golden brown. Let cool before cutting into bars.
