Crab and Shrimp Seafood Bisque

Ingredients
  

Seafood
  • 1 lb fresh crab meat preferably lump crab meat
  • 1 lb shrimp peeled and deveined
Vegetables
  • 1 medium onion chopped
  • 2 stalks celery chopped
  • 1 medium carrot chopped
  • 2 cloves garlic minced
Liquids
  • 4 cups fish stock or seafood stock
  • 1 cup heavy cream
Herbs and Spices
  • 1 tbsp fresh thyme chopped
  • 1 tbsp Old Bay seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Others
  • 2 tbsp olive oil for sautéing
  • 2 tbsp butter for richness

Method
 

Prepare the Seafood
  1. In a large pot, heat olive oil and butter over medium heat. Add chopped onion, celery, carrot, and garlic. Sauté until vegetables are soft, about 5 minutes.
  2. Add shrimp and cook until they turn pink, about 3-4 minutes. Remove shrimp and set aside.
Make the Bisque Base
  1. Add fish stock to the pot and bring to a simmer. Stir in thyme, Old Bay seasoning, salt, and pepper.
  2. Simmer for 20 minutes to allow flavors to meld.
Blend and Finish
  1. Using a blender, carefully puree the soup until smooth. Return to pot.
  2. Stir in heavy cream and crab meat. Cook for an additional 5 minutes until heated through.
  3. Add the cooked shrimp back into the bisque and serve hot.
