Ingredients
  

Crispy Chicken
  • 2 cups chicken breast cut into bite-sized pieces
  • 1 cup all-purpose flour for breading
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs beaten
  • 2 cups vegetable oil for frying
Mashed Potatoes
  • 4 large russet potatoes peeled and cubed
  • 1/2 cup milk warm
  • 1/4 cup butter melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Gravy
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth or stock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Corn
  • 1 can sweet corn drained

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper. Dredge chicken pieces in the flour mixture, then dip in beaten eggs, and coat again with flour.
  2. Heat vegetable oil in a frying pan over medium heat. Fry the chicken pieces until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.
Make the Mashed Potatoes
  1. Boil the cubed potatoes in a large pot of salted water until tender, about 15 minutes. Drain and return to the pot.
  2. Add warm milk, melted butter, salt, and pepper to the potatoes. Mash until smooth and creamy.
Prepare the Gravy
  1. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden.
  2. Gradually whisk in chicken broth, cooking until thickened. Season with salt and pepper.
Assemble the Bowls
  1. In serving bowls, layer mashed potatoes, followed by crispy chicken, corn, and top with gravy.
