Ingredients
  

Citrus and Avocado
  • 1 cup orange segments about 150g
  • 1 cup grapefruit segments about 150g
  • 1/2 cup unsalted roasted pistachios about 75g
  • 3 tbsp extra virgin olive oil 45ml
  • 1/4 cup fresh mint leaves, chopped about 10g
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Prepare the citrus by peeling and segmenting the oranges and grapefruits. Place the segments in a large bowl.
  2. Chop the ripe avocados into chunks and gently add them to the bowl with the citrus.
  3. Sprinkle the pistachios over the mixture for added crunch.
  4. Drizzle with olive oil and toss gently to combine without mashing the avocados.
  5. Season with fresh mint, salt, and pepper to taste; toss lightly again.
  6. Serve immediately in plates or a serving bowl, garnished with additional mint if desired.
