Marinate the Chicken
- In a mixing bowl, combine lime juice, cilantro, garlic, cumin, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 15 minutes.
Cook the Chicken
- Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked and juices run clear.
Prepare the Riced Cauliflower
- While the chicken is cooking, rice the cauliflower using a food processor or box grater. Heat olive oil in a skillet over medium heat.
- Add riced cauliflower to the skillet, season with salt and pepper, and sauté for about 5-7 minutes until tender.
Serve
- Plate the riced cauliflower and top with grilled chicken. Garnish with additional cilantro if desired.
