Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice about 2 limes
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Riced Cauliflower
  • 1 medium head of cauliflower riced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped for garnish

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine lime juice, cilantro, garlic, cumin, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked and juices run clear.
Prepare the Riced Cauliflower
  1. While the chicken is cooking, rice the cauliflower using a food processor or box grater. Heat olive oil in a skillet over medium heat.
  2. Add riced cauliflower to the skillet, season with salt and pepper, and sauté for about 5-7 minutes until tender.
Serve
  1. Plate the riced cauliflower and top with grilled chicken. Garnish with additional cilantro if desired.
