Ingredients
  

Salad Base
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup red bell pepper diced
  • 1/2 cup red onion thinly sliced
Fruits and Nuts
  • 1 cup pomegranate seeds
  • 1/2 cup walnuts chopped
  • 1 medium apple diced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion.
  2. Add the pomegranate seeds, walnuts, and diced apple on top of the salad mixture.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
