- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt; set aside.
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Gradually add dry ingredients to the wet mixture until just combined; fold in dried strawberries.
- Scoop dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes until golden around the edges but soft in the center.
- Allow cookies to cool slightly before melting chocolate chips in intervals until smooth. Dip half of each cookie into chocolate and let set on parchment paper.
