Ingredients
  

Chicken and Broccoli
  • 1 lb boneless, skinless chicken breast sliced into thin strips
  • 4 cups broccoli florets fresh or frozen
  • 2 tbsp vegetable oil for cooking
  • 2 cloves garlic minced
  • 1 inch ginger fresh, minced
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil for flavor
  • 1 tbsp rice vinegar optional

Method
 

Prepare the Chicken and Broccoli
  1. Slice the chicken breast into thin strips and season with salt and pepper.
  2. Wash and cut the broccoli into florets.
Cook the Chicken
  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
  2. Add the chicken strips and stir-fry for about 5-7 minutes until cooked through.
Add Broccoli and Sauce
  1. Add the remaining tablespoon of oil, garlic, and ginger to the wok and stir-fry for 1 minute.
  2. Add the broccoli florets and stir-fry for another 3-4 minutes until bright green and tender-crisp.
  3. Pour in the soy sauce, sesame oil, and rice vinegar, then add the cornstarch mixture to thicken the sauce.
Serve
  1. Stir everything together until well combined and heated through, about 2 minutes.
  2. Serve hot over steamed rice or noodles.

Notes

For added flavor, marinate the chicken in soy sauce and ginger for 30 minutes before cooking.
