Ingredients
  

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt to taste
  • Pepper to taste

Method
 

  1. Rinse and drain the canned chickpeas. Pat them dry for extra crispness.
  2. In a large bowl, combine diced avocado, halved cherry tomatoes, diced cucumber, sliced red onion, and crumbled feta cheese. Toss gently to avoid mashing the avocado.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  4. Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
  5. Serve immediately or chill for 30 minutes to enhance flavors.
