Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken thighs cut into strips
  • 2 tbsp olive oil
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Taco Toppings
  • 1 cup chopped fresh cilantro
  • 1 cup diced onions
  • 1 cup diced tomatoes
  • 1 cup sliced radishes
  • 1 cup sour cream for serving
  • 8 pieces corn tortillas warmed

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, cumin, chili powder, garlic powder, salt, and black pepper. Add the chicken strips and toss to coat. Cover and marinate for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
Assemble the Tacos
  1. Remove the chicken from the grill and let it rest for a few minutes. Slice the chicken into bite-sized pieces. Place the chicken on warmed corn tortillas and top with cilantro, onions, tomatoes, radishes, and a dollop of sour cream.
