Ingredients
  

Salad Base
  • 2 cups mixed greens such as spinach and arugula
  • 1 cup cabbage shredded
  • 1 cup carrots shredded
  • 1 cup red bell pepper sliced
Chicken and Cashews
  • 1 pound chicken breast boneless, skinless
  • 1 cup cashews roasted, unsalted
Dressing
  • 3 tablespoons soy sauce low sodium
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger freshly grated
  • 1 clove garlic minced

Method
 

Prepare the Chicken
  1. Preheat a grill pan or skillet over medium heat. Season the chicken breast with salt and pepper.
  2. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest.
  3. Once cooled, slice the chicken into strips.
Make the Dressing
  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine the mixed greens, cabbage, carrots, and red bell pepper.
  2. Add the sliced chicken and cashews to the salad.
  3. Drizzle the dressing over the salad and toss gently to combine.
