  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
Protein and Toppings
  • 2 cups grilled chicken breast sliced
  • 6 slices bacon cooked and crumbled
  • 1 large avocado diced
Lemon Vinaigrette
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, and red bell pepper.
  2. Add the sliced grilled chicken, crumbled bacon, and diced avocado on top.
Make the Lemon Vinaigrette
  1. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the lemon vinaigrette over the salad and toss gently to combine.
