Ingredients
  

Salad Filling
  • 2 cups cooked chicken breast shredded
  • 1 medium avocado diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Wraps
  • 8 large romaine lettuce leaves

Method
 

Prepare the Salad Filling
  1. In a mixing bowl, combine the shredded chicken, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
  2. Add lime juice, salt, and black pepper to the mixture and gently toss to combine.
Assemble the Roll Ups
  1. Take a romaine lettuce leaf and spoon a portion of the chicken avocado salad mixture onto the center.
  2. Fold the sides of the lettuce leaf over the filling and roll it up tightly.
  3. Repeat with the remaining lettuce leaves and filling.
Serve
  1. Arrange the roll ups on a platter and serve immediately.
