Ingredients
  

Chicken and Avocado
  • 2 cups cooked chicken breast shredded or sliced
  • 1 medium avocado mashed
  • 1 teaspoon lime juice freshly squeezed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Sandwich Assembly
  • 8 slices whole grain bread
  • 1 cup cheddar cheese shredded
  • 2 tablespoons butter softened

Method
 

Prepare the Chicken and Avocado Mixture
  1. In a bowl, combine the shredded chicken, mashed avocado, lime juice, salt, and black pepper. Mix well until combined.
Assemble the Sandwiches
  1. Spread butter on one side of each slice of bread. On the unbuttered side, place a generous amount of the chicken and avocado mixture, followed by a sprinkle of cheddar cheese. Top with another slice of bread, buttered side up.
Grill the Sandwiches
  1. Heat a grill or skillet over medium heat. Place the sandwiches on the grill and cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Serve
  1. Remove the sandwiches from the grill, slice in half, and serve immediately.
