Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil for cooking
  • 1 cup broccoli florets fresh or frozen
  • 1 cup bell pepper sliced
  • 1 tsp garlic powder
  • 1 tsp paprika
Sweet Potatoes
  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil for roasting
  • 1 tsp cinnamon optional
Rice
  • 1 cup brown rice or white rice
  • 2 cups water
Toppings
  • 1 avocado sliced for garnish
  • 1/4 cup green onions chopped
  • 1/4 cup cilantro chopped

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, cinnamon, salt, and pepper. Spread them on a baking sheet.
  2. Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
Cook Rice
  1. In a rice cooker or pot, combine the brown rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat and simmer for about 45 minutes until water is absorbed.
Cook Chicken and Vegetables
  1. In a skillet, heat olive oil over medium heat. Add the chicken pieces, garlic powder, paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  2. Add the broccoli and bell pepper to the skillet and cook for an additional 5-7 minutes until the vegetables are tender.
Assemble the Bowl
  1. In each bowl, layer the cooked rice, followed by the chicken and vegetable mixture, then top with roasted sweet potatoes.
  2. Garnish with sliced avocado, green onions, and cilantro before serving.
