Ingredients
  

Rice and Beans
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth or water
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
Cheese Topping
  • 1 cup cheddar cheese shredded
  • 1 cup monterey jack cheese shredded
Garnishes
  • 1 cup fresh cilantro chopped

Method
 

Cook the Rice
  1. In a medium saucepan, bring vegetable broth to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 18-20 minutes until rice is tender and liquid is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
Prepare the Bean Mixture
  1. In a large skillet, combine black beans, corn, cumin, chili powder, garlic powder, and salt. Cook over medium heat for about 5-7 minutes until heated through.
Combine and Melt Cheese
  1. Add the cooked rice to the skillet with the bean mixture and stir to combine.
  2. Sprinkle the shredded cheddar and monterey jack cheese over the top. Cover and cook for an additional 5 minutes until the cheese is melted.
Serve
  1. Spoon the cheesy black beans and rice into bowls. Garnish with fresh cilantro, lime wedges, and avocado slices.
