Method
Cook the Rice
- In a medium saucepan, bring vegetable broth to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 18-20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
Prepare the Bean Mixture
- In a large skillet, combine black beans, corn, cumin, chili powder, garlic powder, and salt. Cook over medium heat for about 5-7 minutes until heated through.
Combine and Melt Cheese
- Add the cooked rice to the skillet with the bean mixture and stir to combine.
- Sprinkle the shredded cheddar and monterey jack cheese over the top. Cover and cook for an additional 5 minutes until the cheese is melted.
Serve
- Spoon the cheesy black beans and rice into bowls. Garnish with fresh cilantro, lime wedges, and avocado slices.
