- In a large skillet over medium heat, cook the ground beef until browned (about 6-8 minutes). Drain excess fat.
- Season the beef with salt and pepper; stir in diced onions if desired for added flavor.
- Reduce heat to low, place cheddar cheese slices on top of the beef, and cover until melted (about 1 minute).
- Slice each hoagie roll down the middle without cutting through completely.
- Generously fill each roll with the cheesy beef mixture.
- Top with lettuce and tomato slices, then drizzle with ketchup and mustard.
