Ingredients
  

  • 8 ounces fettuccine pasta
  • 1 pound ribeye or sirloin steak, cut into strips
  • 2 tablespoons Cajun seasoning More for seasoning to taste
  • 1 cup heavy cream
  • 1 cup bell peppers (assorted colors), sliced
  • 1 medium onion, sliced
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley For garnish
  • 2 tablespoons olive oil For cooking

Method
 

  1. Cook fettuccine in salted boiling water until al dente; reserve ½ cup of pasta water before draining.
  2. Season steak strips with Cajun seasoning generously.
  3. Heat olive oil in a large skillet over medium-high heat. Sear steak for about 3-4 minutes until browned; remove and set aside.
  4. In the same skillet, sauté onions and bell peppers for about five minutes until softened.
  5. Reduce heat to medium-low; add heavy cream and scrape up any brown bits from the pan. Stir in Parmesan cheese until melted; adjust thickness with reserved pasta water if necessary.
  6. Return cooked fettuccine and seared steak to the skillet, tossing until well coated and heated through.
