Ingredients
  

Buffalo Tofu
  • 1 block extra-firm tofu pressed and drained
  • 1/2 cup buffalo sauce store-bought or homemade
  • 1 cup all-purpose flour for coating
  • 1 cup panko breadcrumbs for extra crunch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
Easy Vegan Ranch
  • 1 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dill weed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 cup plant-based milk unsweetened
Wrap Assembly
  • 4 large whole wheat tortillas
  • 2 cups mixed greens
  • 1 cup sliced cucumbers
  • 1 cup sliced tomatoes

Method
 

Prepare the Tofu
  1. Preheat the oven to 400°F (200°C). Cut the pressed tofu into bite-sized cubes.
  2. In a mixing bowl, combine flour, garlic powder, onion powder, and salt. Dredge tofu cubes in the flour mixture, then dip in buffalo sauce, and coat with panko breadcrumbs.
  3. Place the coated tofu on a baking sheet and bake for 20 minutes, flipping halfway through until crispy.
Make the Vegan Ranch
  1. In a bowl, whisk together vegan mayonnaise, apple cider vinegar, dill weed, garlic powder, onion powder, salt, and plant-based milk until smooth.
Assemble the Wraps
  1. Lay a tortilla flat and add a handful of mixed greens, followed by crispy buffalo tofu, sliced cucumbers, and tomatoes.
  2. Drizzle with vegan ranch dressing and wrap tightly. Repeat with remaining tortillas.

Notes
