Buffalo Chicken Mixture
  • 1 lb ground chicken or shredded cooked chicken
  • 1/2 cup buffalo sauce plus extra for serving
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing for drizzling

Method
 

Prepare the Buffalo Chicken
  1. In a mixing bowl, combine ground chicken, buffalo sauce, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Heat a skillet over medium-high heat. Once hot, add the chicken mixture, pressing it down to form a patty. Cook for about 5 minutes until browned.
  3. Flip the patty and cook for another 3-4 minutes until fully cooked through. Remove from heat and let rest for a minute.
Assemble the Tacos
  1. Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
  2. Place the cooked buffalo chicken patty on each tortilla.
  3. Top with shredded lettuce, diced tomatoes, and shredded cheddar cheese.
  4. Drizzle with ranch dressing and additional buffalo sauce if desired. Serve immediately.
