  • 1/2 cup Bourbon
  • 2 medium Fresh Peaches sliced
  • 1/4 cup Soy Sauce
  • 2 tablespoons Honey
  • 2 cloves Garlic minced
  • 1 teaspoon Ginger grated
  • 4 fillets Salmon Fillets
  • 2 tablespoons Olive Oil
  • 1/4 cup Fresh Basil or Mint Leaves for garnish
  • 2 wedges Lemon for garnish

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine bourbon, soy sauce, honey, minced garlic, and grated ginger to make the marinade.
  3. Place the salmon fillets in a baking dish and pour the marinade over them, ensuring they are well-coated.
  4. Cut the peaches into slices and arrange them around the salmon in the baking dish.
  5. Drizzle olive oil over the peaches and salmon.
  6. Bake in the preheated oven for 20 minutes or until the salmon is cooked through.
  7. Remove from the oven and garnish with fresh basil or mint leaves and lemon wedges before serving.
