Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup milk can substitute with almond milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
Filling
  • 1 cup fresh blueberries or frozen, thawed
  • 1 tbsp lemon juice

Method
 

Prepare the Oven and Pan
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
Mix Wet Ingredients
  1. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until well combined.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined.
  2. Gently fold in the blueberries and lemon juice.
Bake the Bread
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and serve as desired.
