Ingredients
  

Vegetables
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups fresh tomatoes chopped
  • 2 cups vegetable broth or chicken broth
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon dried basil or fresh basil leaves
Cream
  • 1/2 cup heavy cream for creaminess

Method
 

Prepare the Base
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Stir in chopped tomatoes, vegetable broth, sugar, salt, pepper, and dried basil. Bring to a boil.
Cook the Soup
  1. Reduce heat and let the soup simmer for about 20 minutes, allowing the flavors to meld.
Blend and Finish
  1. Using a blender, carefully puree the soup until smooth. Return to the pot.
  2. Stir in the heavy cream and heat through for another 5 minutes. Adjust seasoning if necessary.
Serve
  1. Ladle the soup into bowls and garnish with fresh basil if desired. Serve hot.
