Ingredients
  

Quinoa and Chickpeas
  • 1 cup quinoa rinsed
  • 1 can chickpeas drained and rinsed
  • 2 cups water for cooking quinoa
  • 1 teaspoon salt for quinoa
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup corn canned or frozen
  • 1 avocado sliced
BBQ Ranch Dressing
  • 1/2 cup ranch dressing store-bought or homemade
  • 1/4 cup BBQ sauce your favorite brand

Method
 

Cook Quinoa
  1. In a medium pot, combine quinoa, water, and salt. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
Prepare Dressing
  1. In a small bowl, whisk together ranch dressing and BBQ sauce until well combined.
Assemble Bowls
  1. In a large bowl, combine cooked quinoa, chickpeas, cherry tomatoes, cucumber, and corn.
  2. Drizzle BBQ ranch dressing over the mixture and toss to combine.
  3. Serve in individual bowls topped with sliced avocado.
