Ingredients
  

BBQ Chicken Filling
  • 2 cups cooked chicken shredded
  • 1 cup BBQ sauce your favorite brand
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
Sandwich Assembly
  • 8 slices bread your choice
  • 4 tablespoons butter softened

Method
 

Prepare the BBQ Chicken Filling
  1. In a bowl, mix the shredded chicken with BBQ sauce until well coated.
  2. Add the cheddar and mozzarella cheese to the chicken mixture and stir until combined.
Assemble the Sandwiches
  1. Spread butter on one side of each slice of bread.
  2. On the unbuttered side, place a generous amount of the BBQ chicken filling.
  3. Top with another slice of bread, buttered side up.
Grill the Sandwiches
  1. Heat a skillet over medium heat.
  2. Carefully place the sandwiches in the skillet and cook for about 4-5 minutes until golden brown.
  3. Flip the sandwiches and cook for another 4-5 minutes until the other side is golden and the cheese is melted.
Serve
  1. Remove the sandwiches from the skillet and let them cool for a minute.
  2. Cut in half and serve warm.
