Baked Cranberry Brie Bites

Deliciously flaky pastry filled with creamy brie and tart cranberry sauce, perfect for appetizers or party snacks.

Ingredients
  

Pastry and Filling
  • 1 sheet puff pastry thawed
  • 8 oz brie cheese cut into small cubes
  • 1/2 cup cranberry sauce store-bought or homemade
  • 1 egg egg beaten for egg wash
  • 1 tbsp fresh rosemary chopped, optional

Method
 

Prepare the Pastry
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface and cut it into 2-inch squares.
  3. Place the squares on the prepared baking sheet.
Assemble the Bites
  1. Place a cube of brie in the center of each pastry square.
  2. Top each piece of brie with a teaspoon of cranberry sauce.
  3. Fold the corners of the pastry over the filling and pinch to seal.
  4. Brush the tops with beaten egg and sprinkle with chopped rosemary if desired.
Bake
  1. Bake in the preheated oven for 15-20 minutes or until golden brown.
  2. Remove from the oven and let cool slightly before serving.

Notes

These bites can be made ahead of time and frozen before baking. Just add a few extra minutes to the baking time if baking from frozen.
