Ingredients
  

Salmon
  • 4 fillets salmon skinless
Cajun Seasoning
  • 2 tablespoons Cajun seasoning store-bought or homemade
Avocado
  • 2 medium avocados ripe, diced
Lemon
  • 1 medium lemon juiced
Olive Oil
  • 2 tablespoons olive oil extra virgin
Salt
  • 1 teaspoon salt to taste
Black Pepper
  • 1 teaspoon black pepper freshly ground

Method
 

Prepare the Salmon
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, Cajun seasoning, salt, and black pepper.
  3. Brush the salmon fillets with the seasoning mixture on both sides.
Bake the Salmon
  1. Place the seasoned salmon fillets on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.
Prepare the Avocado
  1. While the salmon is baking, dice the avocados and place them in a bowl.
  2. Drizzle with lemon juice and gently toss to combine.
Serve
  1. Once the salmon is done, remove it from the oven and let it rest for a few minutes.
  2. Serve the baked salmon topped with the avocado mixture.
