Ingredients
  

Salmon
  • 4 fillets salmon fillets skinless
Boursin Cheese
  • 8 oz Boursin cheese garlic & herb flavor
Vegetables
  • 2 cups asparagus trimmed
  • 1 cup cherry tomatoes halved
Seasoning
  • 1 tbsp olive oil for drizzling
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

Prepare the Oven and Baking Dish
  1. Preheat the oven to 375°F (190°C).
  2. Grease a baking dish with a little olive oil.
Prepare the Salmon and Vegetables
  1. Place the salmon fillets in the baking dish.
  2. Arrange the asparagus and cherry tomatoes around the salmon.
Add Boursin Cheese
  1. Spread the Boursin cheese evenly over the top of each salmon fillet.
Season and Bake
  1. Drizzle olive oil over the vegetables and season everything with salt and pepper.
  2. Bake in the preheated oven for 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve
  1. Garnish with fresh parsley and serve immediately.
