Ingredients
  

Soup Base
  • 6 slices bacon chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 2 cups heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Gnocchi and Cheese
  • 1 pound potato gnocchi fresh or frozen
  • 2 cups cheddar cheese shredded
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Cook Bacon and Vegetables
  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.
Prepare Soup Base
  1. Pour in the chicken broth and bring to a simmer. Add the heavy cream, dried thyme, salt, and black pepper. Stir well.
Add Gnocchi and Cheese
  1. Add the potato gnocchi to the pot and cook according to package instructions, usually about 3-5 minutes.
  2. Once the gnocchi is cooked, stir in the shredded cheddar cheese until melted and creamy.
Serve
  1. Ladle the soup into bowls, garnish with crispy bacon and chopped parsley, and serve hot.

Notes

For a thicker soup, you can blend a portion of the soup and return it to the pot before adding the cheese.
