Cook Bacon and Vegetables
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the diced onion to the pot and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another minute.
Prepare Soup Base
- Pour in the chicken broth and bring to a simmer. Add the heavy cream, dried thyme, salt, and black pepper. Stir well.
Add Gnocchi and Cheese
- Add the potato gnocchi to the pot and cook according to package instructions, usually about 3-5 minutes.
- Once the gnocchi is cooked, stir in the shredded cheddar cheese until melted and creamy.
Serve
- Ladle the soup into bowls, garnish with crispy bacon and chopped parsley, and serve hot.

For a thicker soup, you can blend a portion of the soup and return it to the pot before adding the cheese.
