Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed and drained
  • 2 cups chicken broth or vegetable broth for vegetarian option
  • 1 medium tomato diced
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon vegetable oil for sautéing
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1/2 cup frozen peas optional

Method
 

Prepare the Rice
  1. In a medium saucepan, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the rinsed rice to the saucepan and stir to coat the rice with the oil and onion mixture.
Add Broth and Seasonings
  1. Pour in the chicken broth and add the diced tomato, cumin, chili powder, and salt.
  2. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan.
  3. Simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Finish and Serve
  1. If using, stir in the frozen peas during the last 5 minutes of cooking.
  2. Remove from heat and let sit covered for 5 minutes.
  3. Fluff the rice with a fork before serving.

Notes
