Ingredients
  

Salad Base
  • 2 cups romaine lettuce chopped
  • 1 cup red cabbage shredded
  • 1 cup carrots shredded
  • 1 cup cucumber sliced
  • 1/2 cup green onions sliced
  • 1/2 cup cilantro chopped
Chicken
  • 2 cups grilled chicken breast sliced
Crunchy Toppings
  • 1/2 cup almonds sliced
  • 1/2 cup crispy wonton strips
Dressing
  • 1/4 cup soy sauce low sodium
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 clove garlic minced
  • 1 teaspoon ginger grated

Method
 

Prepare the Chicken
  1. Grill the chicken breasts over medium heat for about 6-7 minutes on each side or until fully cooked.
  2. Let the chicken rest for a few minutes before slicing it into strips.
Make the Dressing
  1. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine the romaine lettuce, red cabbage, carrots, cucumber, green onions, and cilantro.
  2. Add the sliced grilled chicken on top of the salad mixture.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Top with sliced almonds and crispy wonton strips before serving.
