Prepare the Eggplant

- Brush each eggplant slice with olive oil, then coat with the breadcrumb mixture, pressing gently to adhere.
Air Fry the Eggplant
- Preheat the air fryer to 400°F (200°C). Arrange the coated eggplant slices in a single layer in the air fryer basket.
- Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
