Ingredients
  

Eggplant Preparation
  • 1 large eggplant sliced into 1/2 inch rounds
  • 1 teaspoon salt for sweating the eggplant
  • 1 cup panko breadcrumbs for coating
  • 1/2 cup parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/2 cup olive oil for brushing

Method
 

Prepare the Eggplant
  1. Slice the eggplant into 1/2 inch rounds and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
  2. Rinse the eggplant slices under cold water and pat dry with paper towels.
Coat the Eggplant
  1. In a mixing bowl, combine panko breadcrumbs, parmesan cheese, garlic powder, and black pepper.
  2. Brush each eggplant slice with olive oil, then coat with the breadcrumb mixture, pressing gently to adhere.
Air Fry the Eggplant
  1. Preheat the air fryer to 400°F (200°C). Arrange the coated eggplant slices in a single layer in the air fryer basket.
  2. Cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
