  • 4 medium potatoes (diced, Russet or Yukon Gold)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 bunch kale (chopped, about 4 cups)
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • Olive oil
  • Salt
  • Pepper
  • Red pepper flakes (optional)

Instructions

  1. In a large pot over medium heat, drizzle olive oil and add the chicken sausage, breaking it apart as it cooks for 5–7 minutes until browned.
  2. Stir in diced onion and sauté for 3–4 minutes. Add minced garlic and cook for an additional minute.
  3. Mix in diced potatoes and pour in chicken broth. Bring to a boil before reducing to a simmer for about 15 minutes until potatoes are tender.
  4. Add chopped kale and red pepper flakes if desired; cook for another 5 minutes.
  5. Lower heat and stir in heavy cream; season with salt and pepper to taste. Warm through for another few minutes before serving.
