  • 4 cups shredded zucchini
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 cups pizza sauce
  • 1 green bell pepper, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C). In a bowl, mix shredded zucchini with salt and let sit for 10 minutes. Squeeze out excess moisture.
  2. Combine drained zucchini with eggs, Parmesan cheese, and half of the mozzarella in the same bowl. Mix well.
  3. Grease a 9×13-inch baking dish and press the zucchini mixture evenly into the bottom to form a crust. Bake for 20 minutes until set.
  4. While the crust bakes, brown ground beef with chopped onion in a skillet over medium heat until no longer pink; drain excess fat.
  5. Stir in pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper. Cook for another 5 minutes.
  6. Spread beef mixture over baked crust and top with remaining mozzarella and cheddar cheese.
  7. Return to oven and bake for an additional 20 minutes until cheese is melted and bubbly.
  8. Let cool slightly before slicing to serve.
