  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup jasmine rice
  • 1 can coconut milk
  • 1 cup water
  • Sliced avocado
  • Halved cherry tomatoes
  • Fresh cilantro, chopped (optional)

Instructions

  1. Marinate the shrimp by mixing lime juice, garlic, chili powder, salt, and pepper in a bowl. Add the shrimp and let it soak for 15-30 minutes.
