  • 200g udon noodles
  • 2 tbsp neutral oil
  • 810 shrimp (approximately 100g)
  • 1 clove garlic (minced)
  • 1 yellow onion (sliced)
  • 120g white mushrooms (sliced)
  • 1 carrot (cut matchstick-style)
  • 1 spring onion (chopped)
  • 1 tbsp soy sauce
  • Pinch of salt and pepper
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
  • 1/3 tsp freshly crushed black pepper
  • 2 tsp toasted sesame oil

Instructions

  1. Boil the udon noodles according to package instructions. Rinse with cold water after draining.
  2. In a pan, heat 1 tablespoon of neutral oil over medium-high heat and sauté minced garlic for one minute.
  3. Add sliced mushrooms, onions, and carrots; stir-fry until crisp-tender.
  4. Add another tablespoon of oil and toss in the shrimp, cooking until pink and opaque.
  5. Incorporate the udon noodles into the mix over high heat, stirring continuously.
  6. Pour in a sauce mixture of oyster sauce, dark soy sauce, rice vinegar, brown sugar, crushed black pepper, and toasted sesame oil; stir to coat.
  7. Gently add back sautéed veggies to reheat without losing color.
  8. Finish by sprinkling chopped spring onion greens over the top before serving.
