Ingredients

Scale
  • 35 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 tbsp dried chives
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp salt
  • 1 tsp black pepper
  • 68 whole pepperoncini peppers
  • 12 tbsp pepperoncini juice
  • 4 tbsp ghee

Instructions

  1. Sear the chuck roast: Pat dry, season with salt and pepper, and sear in olive oil until golden brown on all sides. Transfer to a slow cooker.
  2. Deglaze the pan: Pour beef broth into the skillet, scraping up browned bits; let reduce by half before pouring over the roast.
  3. Add seasonings: Sprinkle dried herbs over the roast, arrange pepperoncini on top, add juice from the jar, and top with ghee. Cover and cook on low for 8-10 hours or high for 5-6 hours until fork-tender.
  4. Serve: Enjoy your pot roast over mashed cauliflower, rice, or on its own.
