  • 1/2 cup (115g) vegan butter or margarine (chilled)
  • 3 tablespoons (35g) granulated sugar
  • 23 tablespoons cold water
  • 45 apples (your choice, cored)
  • 3 tablespoons (40g) granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon (8g) all-purpose plain flour
  • Dash of lemon juice (optional)
  • 2 tablespoons (30g) vegan butter or coconut oil (melted)
  • 3 tablespoons (60g) apricot jam

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch tart pan.
  2. In a bowl, mix chilled vegan butter, flour, and sugar until sandy. Gradually add cold water until the mixture holds together.
  3. Chill the dough in plastic wrap while preparing the filling.
  4. Core and slice apples, tossing them with sugar, cinnamon, and flour in a bowl.
  5. Roll out the dough and place it in the tart pan. Layer the apple slices on top and drizzle with melted vegan butter.
  6. Bake for approximately 70 minutes until golden brown and bubbling.
  7. Brush apricot jam over the warm tart before cooling slightly and slicing.
