Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix egg, milk, melted butter, and vanilla until combined.
  4. Pour wet ingredients into dry ingredients; stir until just moistened.
  5. Gently fold in chopped apples.
  6. For the streusel topping, combine flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
  7. Fill muffin cups with batter; sprinkle with streusel topping.
  8. Bake for 18-22 minutes until golden and a skewer comes out clean.
