  • 2 tablespoons sun-dried tomatoes
  • 1 cup heavy cream
  • ⅓ cup grated Parmesan cheese
  • 3 ounces baby spinach

Instructions

  1. Preheat your oven or microwave to cook the spaghetti squash until tender (8-12 minutes). Let cool before shredding into strands.
  2. Season chicken pieces with salt, pepper, and Italian seasoning. Sear in butter over medium-high heat until golden and cooked through, then set aside.
  3. In the same skillet, melt remaining butter and sauté garlic and shallots until fragrant. Stir in sun-dried tomatoes.
  4. Add heavy cream to create a sauce; mix in Parmesan cheese until melted. Incorporate baby spinach and return cooked chicken to the skillet.
