  • 3/4 cup (85g) natural unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1 cup (240ml) vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 cup (240ml) hot water
  • 1 cup (240ml) water
  • 1/2 cup (112g) unsalted butter
  • 1 cup (240ml) heavy whipping cream
  • 1 tbsp vanilla extract
  • 1 tsp salt
  • 2 1/2 cups (560g) unsalted butter, room temperature
  • 10 cups (1150g) powdered sugar
  • 1/23/4 cup caramel sauce from above
  • Salt, to taste
  • 6 oz (1 cup | 169g) semi-sweet chocolate chips
  • 1/2 cup (180ml) heavy whipping cream
  • 1/2 cup chopped pecans, toasted

Instructions

  1. Prepare the Caramel Sauce: Combine sugar and water in a saucepan over medium-low heat. Stir until dissolved, then add butter and boil without stirring until deep golden in color. Remove from heat, whisk in heavy cream, vanilla, and salt. Cool.
  2. Bake the Chocolate Cake: Preheat oven to 300°F (148°C). In a large bowl, mix dry ingredients, then add eggs, milk, oil, boiling water, and vanilla. Pour into prepared pans and bake for 30-33 minutes.
  3. Make the Caramel Buttercream: Beat butter until smooth; gradually mix in powdered sugar and caramel sauce until creamy.
  4. Assemble the Cake: Level cooled cake layers. Alternate layers with frosting and toasted pecans; frost the outside with remaining buttercream.
  5. Prepare Ganache: Heat cream until boiling; pour over chocolate chips, whisking until smooth. Drizzle over the assembled cake.
