  • 500 g Gnocchi
  • 3 tbsp Truffle Butter
  • 1 1/2 tbsp Flour
  • 250 ml Milk
  • 70 g Cheddar (grated)
  • 30 g plus 1 tbsp Parmesan (grated)
  • Salt and Pepper
  • 30 g Breadcrumbs
  • 1 clove Garlic (crushed)
  • 1/2 tbsp Parsley (chopped)

Instructions

  1. Preheat your oven to 190°C/375°F. Cook the gnocchi as per package instructions until tender; drain well.
  2. In a large saucepan over medium heat, melt 2 tablespoons of truffle butter. Whisk in flour for two minutes to form a roux.
  3. Gradually add milk while whisking until the sauce thickens. Stir in cheddar and remaining parmesan until melted. Season with salt and pepper.
  4. Combine cooked gnocchi with the cheese sauce until well-coated. Transfer to a baking dish.
  5. In a food processor, blend remaining truffle butter, breadcrumbs, garlic, and parsley until mixed; sprinkle over the top of the pasta.
  6. Bake for 10-15 minutes until golden brown on top.
