  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or agave syrup
  • 1 tablespoon sesame oil

Instructions

  1. Cook the rice vermicelli noodles according to package instructions, then drain and rinse under cold water.
  2. Thinly slice the carrots, bell peppers, cucumber, and green onions.
  3. In a large bowl, combine the shredded carrots, sliced bell peppers, cucumber, bean sprouts, cilantro, mint leaves, and green onions.
