  • 1/4 small purple onion, chopped
  • 1/3 cup fresh herbs (basil and mint), chopped
  • 1 avocado, peeled and chopped
  • 1/2 cup feta cheese
  • 1/2 cup apple vinegar vinaigrette
  • 1 garlic clove, peeled and grated
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon dried Italian seasoning
  • 1/8 teaspoon red pepper flakes
  • 2 teaspoons Dijon mustard
  • 1 cup olive oil
  • Pinch of salt and pepper to taste

Instructions

  1. In a large bowl, combine spring mix lettuce, sliced cucumber, halved cherry tomatoes, chopped onion, diced avocado, fresh herbs, and feta cheese. Toss gently to mix all ingredients well.
  2. Drizzle apple vinegar vinaigrette around the edge of the bowl and fold the salad carefully to avoid wilting the greens.
